The Cure for the First Pancake Problem: Sheet Pan Pancakes

INGREDIENTS
2 eggs, beaten
1 ½ cups Táche Pistachio Milk
3 tbsp olive oil
2 cups flour
1 tbsp coconut sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp sea salt
shredded coconut (optional)
fresh strawberries, sliced (optional)

How to make the strawberry coconut sheet pan pancakes recipe:
- In a large bowl, whisk together all the wet ingredients.
- Add the dry ingredients and mix until the batter is smooth.
- Pour the batter into the lined sheet pan and use a spatula to spread the batter evenly.
- Top it off with sliced strawberries and coconut flakes.
- Bake at 400° for 10-15 mins.
- Cut into slices and serve with powdered sugar and maple syrup.
